Sourdough breaded chicken “cotolette di pollo”. A simple recipe with only 4 ingredients. First you need to dry the sourdough bread in the oven at around 130 C (260 F) for 45-50 min or until it’s completely dry (I like it with extra crunch). Then grind it to make crumbs. Fresh egg, chicken and fry in extra virgin olive oil on medium-high heat. Side of peppery arugula. Everything is organic here. A complete meal, I’ve put 3 slices of bread on this chicken so carbs, protein and fat all in one little parcel of delight. Happy Sunday everyone! 👨🏽‍🍳
