If we’re not deliberate in protecting it, we end up wasting both our energy and the fullness of our time—the very time that modern technology was supposed to save.

Sourdough breaded chicken “cotolette di pollo”. A simple recipe with only 4 ingredients. First you need to dry the sourdough bread in the oven at around 130 C (260 F) for 45-50 min or until it’s completely dry (I like it with extra crunch). Then grind it to make crumbs. Fresh egg, chicken and fry in extra virgin olive oil on medium-high heat. Side of peppery arugula. Everything is organic here. A complete meal, I’ve put 3 slices of bread on this chicken so carbs, protein and fat all in one little parcel of delight. Happy Sunday everyone! 👨🏽‍🍳
